RECIPE: Eggless Milomisu with homemade lady's fingers

I've been wanting to make Tiramisus but I could not find lady's fingers nor mascarpone cheese anywhere. 

I was thrilled to find 250g tubs at Prime Supermarket last week but they were so pricey! $15+ for a small 250g tub. I did find larger 500g tubs for a more affordable price last night on Amazon Prime Now so I got them. Lady's fingers were no where to be found so I decided to bake them! 

I found this recipe from Tasty Cooking Recipes on YouTube that seemed fairly easy so I tried it. 

DISCLAIMER: Eggless here refers to the absence of raw eggs which are typically used in tiramisu mixtures. For recipe to be completely eggless, one can use eggless lady's fingers as such.

Eggless Milomisu with homemade lady's fingers 
Portions listed good enough for 1 10" dome cake and a palm sized tub

Lady's fingers recipe 
(Or use store bought lady's fingers)
280g plain flour
2 tbsp corn flour
2 tsp baking powder
220g castor sugar
4 egg yolks
6 egg whites

6 tbsp castor sugar
6 tbsp icing sugar

Cheese recipe
500g mascarpone cheese
2 tbsp vanilla bean paste
4 tbsp caster sugar
4 tbsp thickened cream

4 packets Milo

Cocoa powder (You may use Milo powder too)

Lady's fingers
Mix dry ingredients for lady's fingers.

Separate eggs.


Add half the sugar to egg yolks.

Whisk till fluffy and pale in colour. I used a hand mixer.

In a clean bowl, whisk egg whites till frothy. Add the other half of sugar gradually.

Whisk till stiff peaks.

Add yolk batter to meringue. 

Mix gently. 
  
Sift in dry ingredients.


Fold till well incorporated. 

Pipe according to size of tiramisu tub/container. 
Mix icing sugar and castor sugar. 
With a large mesh sieve, sift mixture onto cookies.
Set aside for 5 minutes.
Sift a 2nd round of mixture and pop into preheated over of 180 degrees Celsius for about 15 minutes.
Give it a minute or two more if your cookies are fat. 

Set aside to cool!


 Eggless Milomisu

  
In a mixing bowl, add mascarpone cheese, castor sugar, vanilla bean paste and thickened cream (Cooking cream works too). Mix well with a spoon. 

Dip cookies in Milo. Layer soaked cookies, cheese mixture, cocoa powder. Repeat process till tub/bowl is full.

Made a smaller tub too. 




This was well loved by my family and hubby says that the homemade lady's finger are nicer than store bought ones.. That makes the effort all worthwhile!
